		<description>I was given a book on food storage.....includes canning, root cellar storage, &amp; etc., called &quot;Putting Food By&quot; printed in 1974, by Steven Greene Press, Vermont.
It says about EGGPLANT that it loses its looks when canned, but can be used in casseroles, but better to precook it first.  Says to use Italian or Greek recipes for canned eggplant.

Anyone needs to know about anything from this book, I may be able to help.</description>
